I've done it, Buy a RCA converter ( i have the autoleads one )
You have to solder the wires from the RCA to the wires behind the head unit (usually rear left and rear right)
and then you can plug in your amp wires into the RCA converter and install the sub as you would

How easy is it to run the power cable for the amp in these cars?

gti, battery is in the boot so easy peasy!!
rca converter, power from boot, switch from the fuse box

power cable from can be from a little bung under the scuttle panel underneath the windscreen and then you just have to locate it from inside the car...i recommend removing the glove box
