Do you reckon if i fitted a head unit and sub.. would i need to change stock speakers in doors for new ones or/and add 6x9s on the parcel shelf ? :)

No. 6x9's are awful rubbish and pointless.

spend 60% of your budget on some good front component speakers. then sub.

no other speakers

The standard door speakers are good enough, if there is too much bass then just turn the bass down from the headunit settings, i have a Alpine SWR 1242D running of a vibe amp, that is really lopud and can hardly hear the vocals of a song but i have a volume controller connected to the amp that will control the volume of the amp saves haveing to go out of the car and changing it manually from the boot.
