Its buggered in simple terms. Looks like the sump has been threaded!
Have you tried pulling it and twisting at the same time with a pair of mole grips or similar?
Either you'll need to drill it out in some fashion, and retap the thread with a larger one
Or buy a new sump from VW and new bolt
The choice is yours

any rough ideas how much a new sump and fitment is?
Couldn't i get the old plug out and helicoil it?

A helicoil could work...just gotta get the right one and the tool etc...
A new sump is easy to fit (just a seal, some sealant and a handful of bolts to remove and refit) but comes at a rather high price ie £100 ish!

cant see why the helicoil wouldn't work. Its just finding someone to do it!

possibly got a second hand sump. i tried to take the sump off the car a couple off years ago and found it very difficult to remove the bolt towards the gear box. Is there any guides knocking around for sump removal?

haynes manual has a pretty good run down. you have to disconnect the drive shaft on the right hand side to get to it. if you need scan, let me know.

Indeed. GSF and VW aswell as TPS keep them on the shelf for only a few quid 
You will need a new sump gasket too

Cheapest place i've found for a sump is around 80 odd inc vat, will try and dig out where it was....

Oh and getting off the sump is an ABSOLUTE ARSE. i had to smash the old one to smitherines just to get to two bloody bolts next to the fly wheel....
