It's a lot easier when you are quite hard on the brakes! Gentle braking makes it quite hard! I tend to use a mixture of heel and toe and rev matching when I'm around town occasionally I still get it wrong and send everyone flying forward but pressing the brakes too hard
Some pedal set ups mean that you do side of foot and toe which is just as legitimate and effective. When I started driving it was virtually obligatory to employ such techniques in order to make brisk progress especially as the cars I could afford either didn't have synchromesh or if they once had it was worn out. Gearboxes are so much better these days.
An alternative technique was to ignore the clutch completely when changing up or down, not too difficult but bravery, or a hire car needed to perfect the technique.
