How to mount a mirror with the sensor, if my windshield have a black print?

You have all the necessary information on the workshop manual

You have to open the links (in small letters on the left side of the screen) according to need.

Perhaps solvented? and hard work of the wrist. There are many online guides about this ... I never did and I can't advise you.

Maybe you should replace many other parts to your Polo 6R if your intention is to make the project I'm doing.
Wait to see it finished, in this way you can evaluate better whether it is worth.
