sorry for the outburst, i just know the complicated ins and outs by heart having come up through first a deeply catholic primary and a deeply anglican secondary school.... the horror :shock:

it was a way of using up all the fat and other such yummies in the house on the eve of the enforced poverty of lent (where it was basically bread and water for 6 weeks or something). traditionally it was actually your stew-type arrangement, a bit like dumplings or a savoury omelette, and the recipe wasn't fixed - just bung in all the eggs, meat, cheese, milk etc that you had knocking about, with a bit of flour to bind it together, and give it a quick fry-up with the end of the lard.

there's some places serve savoury ones, they're quite a nice meal in themselves, followed by the (now) more traditional sweet sauced ones. even better for being so knowingly stodgeriffic.

a quiet moment if you will for the cousin of my mate, who is allergic to eggs, and therefore can't experience the full experience of a proper pancake, having to make do with severely de-egged batter (one egg between 16 large pancakes, of which he can have one) or some sick-sounding substitute contructed of milk, vinegar and baking soda.
(and also for the mate herself who has given up alcohol for lent ... which of course runs right through st patricks day... being a canny heathen, i have chosen to forgo pancakes for the next 40 days and nights :D)
