Ditto, am running standard height (ok, sport trim so -15mm) at the moment but have heard nothing but good things about Eibach and H&R lowering springs. However, the latter have been known to kill standard shocks over time. The Eibachs lower the car by 30mm at the front and 35mm at the back, so with the GTI springs in place you'd 'only' see a ~15mm difference, although I've heard even that transforms the handling. I've also heard good things about the Koni STR.T springs + shocks kit and might actually consider replacing my OEM setup with them if I still have the car once it's reached 60k miles (53 plate, but still on 37k). These go for £270ish.
Also, if you're looking for outright handling, a rear ARB will nearly eliminate understeer. One made by Whiteline or Jabbasport's in-house kit for the Fabia VRS would work.
