Much appreciated! I will post again when I reach a problem.
I have so many questions about further mods such as lowering springs, hid lamps , how to fit a tailpipe due to the rear bumper not having an exhaust cut out etc.... I have very little knowledge on car modding so if you're able to help with any of that I would really appreciate it.

I cant add too much on those topics. HIDs are fairly easy to fit, but you should look to do a proper retrofit as theres still a question of legality over just changing the bulbs. If you do change the bulbs be sure to get R versions ie H7R as these have an anti glare strip on them which makes the beam much sharper

Do you have to get for example a pair of gti mk5 hid units or do you buy a pair of brand new units from a manufacturer?

You can pick up a set of the proper HID ones on eBay quite easily. Depends what you want to spend

When we are talking about HID's are we referring to the bulb in the unit or is it a different unit all together to a xenon headlight unit for example?

HIDs in the true sense need to be a proper Xenon headlight
You can get a retrofit HID kit with bulbs that fit your existing headlights but the beam can be very scattered and glary

I typed in mk5 Volkswagen hid units and nothing really came up but when I changed it to mk6 I had plenty of results including these pictures above... I believed my polo was mk5 however am I wrong in thinking that?

Search for Polo 6R or Mk7. Its mk5 by VWs terms though no one refers to it as that
