Yellow would be different- Porsche brake calipers are yellow on the ceramic brakes IIRC?
If your heart is set on red or blue, red is the most popular/common choice.
Polo GTi has red calipers... R32 has blue calipers... Skoda vRS models have green calipers... Porsches have red or yellow calipers depending on brakes fitted?

how do you go about painting brake calipers? do you have to take them completely off or can you do it on the actual car? also is it a hard job and/or is there a guide somewhere on doing it?

how long does the paint take to dry, before you can use them again?
i.e. can you take a wheel off, axel stand, paint with a brush, let dry and off you go or are we talking 24 hours without brakes?

a mate of mine has an audi TT - and he painted his red. It's not so much a hard job to do - he didnt take off his calipers, just his wheels, then put his car on axle stands. He bought a kit off the net that came with a spray cleaner (to get rid of the brake dust), caliper paint and audi or brembo stickers

. It has to be said afterwards they didn't look too bad at all, but as i recall it took about 24 hours (ish) for the paint to dry properly, and 2 coats of caliper paint. Not bad though for £30 ish

I would agree.
Plus not so much worrying about cleaning them either!
