where does the temp gauge needle usually sit??????

Once the engine is warm it should sit at 90

On The mk3 though it can sit just below or just above.

when i picked the car up on friday it was sitting at 80...........
yesterda when the heater was only blowing cold air it sat usually in between 100-110:(...........
now after bleeding the heater matrix and getting hot air again it now sits back between 80-90!!!!!
but..........the coolant level was slightly low this morning but nothing major,and there is signs of emulsification on the oil cap!!!!

Top the coolant up and see how it goes.
You have a leaking thermostat housing - have a look around the casing.
