2005 Polo Classic Engine Temperature Sensor

Hi,
New to the forum, I've got a 2005 Polo Classic and the temp needle on the dash goes up to 90 which is normal, then just falls as if the engine is cold, I'll drive a few minutes and the needle will come back up and stay there for how long it wants and then fall back again.
I've got a strong petrol smell, most likely because the engine thinks its cold and runs on the choke ? What could be causing this ? Engine temp sensor faulty ? How do I test it and where is it situated, looked for a manual or step by step guide but couldn't find this on the DIY section
Please help ! Even if you can just show me where that sensor is located....
