I'd say wait until you have the car first

Id say see how the car drives then decide
My 1.2 TSI drives like a dream but after owning it for a year, i know what to buy.
In guessing your GTI will fly like S*** off a shovel so own it for a while, get to know the car, then decide on what to buy

As a happy GTI owner myself, what I'd buy really depends on which extras you have?
If you've got the Shadow Monza wheels I'd keep them as your budget won't get nicer imho.
Personally I don't think a remap is required but drive it for a bit and see what you think. Lowering makes it look good but kills the handling.
I've added a sharksfin aeriel and wind deflectors on the front windows (5 dr). and bought a personalised plate. Don't think the car needs anymore.
Enjoy

Haha ^^^ how does lowering kill the handling???
H&R 25/40 springs, whiteline rear arb, upgraded brake pads, full tank of petrol and go for a drive

still have some left over...
Next move im sure you can make, its your car after all!

Wheels are always a personal thing.
I don't like the standard GTi wheels. I mean, they are alright, but l'd prefer something like those in the picture above.
But l wouldn't go with wider tyres, as it can ruin the balance of the car.
