If they're still in whatever packaging they came in, and you've got your invoice, then it's worth a try. I'd imagine that mats are a frequently purchased accessory, and not a special order item, so the dealer shouldn't have a problem selling them to some one else.
I know that hindsight is a wonderful thing, but it's always worth checking the spec of any car you're considering getting before you do the deal. When I bought my previous car, the dealer tried to sell me a set of carpet mats, which I politely declined as I knew the car came with them as standard.

Above link shows mats are part of standard spec under 'Safety and Security' Vehicle Protection; carpet mats with edged lining in red.
Do VW dealers generally offer refund on parts?

I'd agree with the above, only special order stuff should end up being hit with a handling charge. It would be handy if you still had the bags or clips that came with them as that would make it easier for dealer to resell.
I personally imported a VW Passat B8 4Motion in 2000, it had "luxury" mats fitted, though spec had been vague - I bought a set of VW rubber mats and fitted them on top of the original mats, I personally imported a VW Polo 9N 1.4 SE in 2002, it had "luxury" mats, though spec had been vague - I bought a set of VW rubber mats, I bought a used Audi S4 in 2013, it had only 3 "luxury" mats, I just asked them to throw in a set of Audi rubber mats, I bought my wife a new VW Polo 1.2TSI SEL 5 door in 2015, spec looked a bit vague, so I left off the "luxury" mats, car came with no mats, so again I just bought a set of VW rubber mats.
I seem to have this problem, when would I ever be happy jumping into any of my cars with wet/dirty feet if they had "luxury" mats fitted, with rubber mats, no problem even in winter, just take them out and wash them.
