Polo 2019 GTi - ECU and instrument cluster stolen

Hi all,
I am dealing with a curious case. I am trying to restore a crashed Polo GTi from 2019 and while it was in the yard, someone broke in and stole the ECU and the instrument cluster.
I have read of cases where one of the two had to be replaced with one from a donor vehicle and recoded using software like VCDS but never where both are missing.
How do you proceed when there is neither of the two to use as reference or to clone? (The keys are still available though)
