Changing coolant (Mark3)

With the 'coldest winter' on way, I thought its about the time to change my coolant, as I'm sure the anti-freeze has become incredably weak (coolant just looks like water).
Firstly which coolant? I know VW recommend G11, but I have been told just water and anti-freeze in a 50/50 mix will do.
If just water and anti-freeze work, how much of each do I need to gain the 50/50 ratio?
Finally whats the best way to bleed the system? I have heard running the engine with the expansion tank cap off helps gain the right level, but is there anything else that needs to be done to ensure no air-locks?
