anyway now i need to replace my front discs and pads due to scoring the discs with the bare metal from the back of hte pads.. ive been told this is a relatively simple job can someone help me out ??

I would urge you to buy a haynes manual. Replacing brakes on a MK1 is a simple job, but it's much simpler to RTFM than to explain on here. You won't need any special tools, the hardest part is removing the old front disks as they are held on by a little X head screw, and it rust welds itself to the disk. I had to drill mine off on my MK1 and retap the hole in the hub.

Nah it's ok i have a haynes manual and the rest was pretty much self explanatory.. :D

I managed to remove the old pads - the left front side had actually warn down completely and then started going through the metal layer of the pad.. :/ lol

Needed to do a quick job so i just replaced the brake pads.. havn't replaced the disks although i have new ones. I can't seem to remove the calipers to fit the new disks, as the two nuts that you need to remove at the back of the brakes are seized.

Bit of heat on them and they'll free up.

Always a sticking point (if you pardon the pun)

May be worth investing in an Impact driver to get these out, good way of getting rid of some aggression too!
