ET is how far the wheel sticks out mate, put as simply as possible.
a lower ET means the wheel will be sticking out more

Basically what Ben said but you can use it to calculate exactly how far out the wheels will protrude.
For example, Mk5s have a standard ET of 35 (or 37, one or the other) so wheels with an offset of 25 will stick out 10mm further than standard wheels and so forth.
Not 100% sure on how the width affects it (ie do you add another 25mm for 1" wider wheels?) but same principle

eh i dont think its 35 or 37 like as standard on a mk5! pretty sure its higher than that, like 43 or somethin.

Really? I couldve sworn it was 35..
My current wheels are 15x7 ET35 and they dont stick out at all, they look standard.
I know older/bugger dubs where higher... hmmm

ET is the distance in mm from the hub fixing of the wheel to the centre of the rim
eg if its a 7" wide rim then the ET would be measued at 3.5" of its width in relation to the hub plate. So with a wheel of ET35 and ET45 (assuming there both the same width) the 35 will stick out 10mm more.
So if its an 8" rim also with ET35 the wheel will protude 1/2 more on the outside and 1/2 on the inside.
So my 8" rims with ET20, protrude firstly 15mm more than an ET35 7", then another half inch cause of the width. So about 41mm then!

Would I still be able to get full lock on my polo if I got 7x14 with an et of 25?

I would say so. My 8s look like they will be alright, although they dont have tyres on yet.
Depends on if you get stretched rubber or not

To really fulfil the look, i would think you would need spacers, 15mm or so to make it look really good. You'll still be able to deck it on that!

it will sit normal, as in well within the arches. I personally like 7x15 with an ET 35
