Cold Start Problems

Hi, I've an '89 mark two that I converted to manual choke last year. It starts fine but from cold but I cannot drive off straight away because it wil stall - lack of revs on full choke so I have to sit there revving for a few minutes. After a few minutes I can let my foot off the gas pedal and the tickover is high like it should be on full choke. I've checked the obvious like all the pipes are attached to the air cleaner box etc. Any thoughts?
