The dark grey/black seats on my MK3 GT have suffered over the years from the sun (bleached). Does anyone know of any products that can restore it?

There is not much you can do to sunbleached material.
The best you can hope for would result from a steamclean and some good quality cleaner Zymol Fabric is a good one.
You'll never get it back to 'as new' but the other option you have is to by another set of seats (should be relatively cheap) and take the best parts from it and match it to yours. I know people that have bought three sets of front seats to make one decent pair, alot of hard work, so get your Singer out and practise stitching.
You can of course try Bernard Newbury for a re-cover.
A 'Singer' is a sewing machine BTW.
