The paddle removal isnt supposed to be done by the end user - its a VW garage job as its so god damn fiddly to get back together. VW locks use a free fall mechanism, which is incredibly difficult to reassemble due to the fact you have to tension a rather hard and fiddly spring whilst putting two parts (the paddle and the clamp) into place, without it pinging back. Id recommend getting someone who knows what they are doing to change the paddle, or it could just go horribly wrong

Btw the haynes manual has a breakdown of how it looks inside, it just doesnt tell you reassembly instructions.
