If I don't tell the insurance about my mods, would this effect the MOT.

Nope, but it will invalidate your insurance policy.

Would I tell them about all the mods been done, or a few like performance exhaust, coil, brakes and alloys?

Any part which is changed from standard ie exhaust, suspension, engine work, body work, alloys....etc is deemed as a modification which needs to be declared to your insurer.

Some they may not need to know about but it's worth mentioning to them. Some wont and some may also increase the policy premium.
