My car has roughly 8500 miles, would there be any slight problems in doing a remap.

What is the difference between the software there using in doing remaps apart from the cost?

the difference in software is only the performance change, it wont affect anything else such as electrics in the car etc

and a remap can be done at any time, my gti had 9 miles on the clock when it was remapped, the reason behind my doing this was rather than the car get used to its limits running 150 bhp, it just gets used to running nearly 200 bhp straight away, so no additional strain on the engine at a later stage

When I take my car for a service at VW or getting an MOT, would they be bothered about what I've done?

they rarely bother, i dont kow of a vw garage refusing work due to a remap, just dont tell them

as for mot, youll still be legal dont worry, by miles
