was thinking about replacing the standard steering wheel to a 05 mk VI polo
what exactly would i need and how easy it the job?

Probally very little, you havent stated if the new wheel is 4 spoke or 3 spoke. I f it is the three spoke type then a new airbag will be required you should be able to transfer the electrical side over like for like. A haynes manual will give you a step by step guide how to remove and replace.
