p0116 fault code

Hi.
My polo 1.2 (2003) has registered the above fault code. When it does it becomes difficult to start, as if it floods and I have to get the foot to the floor and run it fast to clear. Apparently this is a coolant temperature out of range warning - how do I change the sensor for this?
