Take it slow painting
Spray from a good distance to avoid runs
Make sure each layer is dried properly between coats.
And with regards to paint I'm pretty sure Halfords do a sort of rubbery paint which comes out a bit like the original paint
Or Gloss looks quite nice £6.29 from Halfords from a medium can or £6.99 for a biggin.
Tho I think most people just end up buying new handles from VW if you want it to look original, neater, saving time and hasstle.

If you have little experience in painting I would recommend taking your handles to a proper bodyshop as you need many materials to achieve even a decent finish.
I'm a professional spray painter by trade for Rolls Royce and bentley.
Time you have got all the stuff it ain't worth the time or hastle buddy.

Its worth spraying the original handles because replacing them with new ones can be quite expensive.
I think both matt black and gloss black work well or you could go for a dark grey similar to the standard colour.
