I think it depends on what gaiter your going for. and if your doing the knob as well.
I replaced the gear gaiter on my SE. brought it from VW but came as one piece (knob and gaiter)
this was nice and easy. took all of 5 seconds.

if you are just replacing the gaiter and keeping the original knob things get a bit more fidderly.
infact im sat with my old gaiter and knob infront of me and i cant really see a way of separating them without braking anything.
...im sure there is a way and someone more paitent has done it, but at the same time there must be a reason it comes as one piece?!

I was told to change the knob you've got to change the gear shaft as the knob is not removable?

I was told the old gaiter had to be cut to be taken off and then u could unscrew the knob and just replace the gaiter :?

Nah pulls straight off. If you unclip the gaitor and lift it up above the knob, theres a little metal clip that pinches the plastic on tight. Theyre attually pretty easy to pull off... but that might just be because my boyfriend and his mates tend to enjoy dismantiling my car as I'm driving. If it is tight you can just loosened it (maybe with some long nosed pliers) and then pinched the new one up once it's swapped over.

you needn't break or cut down anything!! as said above just raise the gaiter over the knob and you see a plastic ring pressing the gaiter to the knob. just loosen it and the gaiter is free to go  in fact I changed the knob but still using the factory gaiter(without tearing it up)

this company seems to do very decent gaiters, never bought from it but looks great and you can match one for the handbrake as well if you want it to look ace ;) btw they do the stitching colour according to your likes :)

What has confused me is some people calling the 6n2 - mk3, mk3f and also mk5.

Thats what i thought, but then i read that its only called that because its the 5th polo vw made, where in facted it just a facelift of the mk3, so in facted the 6n2 is a mk3f.

Its all very confusing :?
