The BlueGT and GTI are both fittet with 215/40-17 from the factory. So the tires shouldn't be a problem...
I'm sure the 8x17" wheels should fit fine... but 9" wide on a Polo seems like it could be close to problematic... But it's possible that it could come down to the right offset...

It would be lowered on springs though I'm sure I've seen 8j front and 9j rears, maybe they were running tyre stretch or the right offset like you say. How about 17x8 et35 all round? Any idea?

I'd think 8js would be a safe bet. Or 9j with a high et might work at the back.
Tbh, if your running springs, you shouldn't get any scrubbing unless you're hammering it over speed bumps with really bad fitment.
Alright cool thanks for the advice. What is a high et? Would that be 55 or 15 for example? I think I'll look for 8", also does j really matter? Am I correct in saying it's a lip to stop the tyre popping off?
8inch wide at the front is really max you want to go on a 35et offset. On the rear I've had 9inch wide with a 38et offset no problems. You'll have around 5-10mm poke in the rear
