Do you ever squeeze your dashboard?
I was waiting in the car this afternoon, wondering why people - myself included - make such a big deal about soft-touch dashboards when they're choosing a new car...

The softer it is, the more it absorbs sound and the less it rattles. If I'd wanted an interior like a 1998 Subaru Impreza, I'd have got one!
Seriously though, I think it's something drummed into car buyers by car mags/websites, and used as a way of perceiving quality. The problem is, the car makers know exactly where to spend the money to give that facade of build quality and where they can get away with it. Makes sense though I guess.
I remember the rear seats of my Golf V GTD were not as nice a place to be fit and finish wise compared to the front seats!

I've only just realised I do this when buying cars
Must be as Tooks and Mart!n mentioned that it's perceived quality. I do the same with the ruddy wheel too.....
