Does anyone know whether a mk4 Golf leather 3-spoke steering wheel would fit a mk 6nz polo?

No, in the sense that the airbag may not work. I believe Mk5's are different, but to be sure you'll need the Mk3.5 cabby. That has the new style wheel + airbag, but the old style plug.
