PS2 runnin through my Poineer HU?

Silly request maybe, but I was wondering is it a simple installation to run a PS2 through my HU - Speakers - AMP?

Yes. Just connect the two audio RCA leads of the PS" cable to the AUX IN RCAs in the HU. If you don't have direct AUX IN RCAs in the HU you have to buy the adapter. What's your HU model?
