mk1 lowering

Hi guys, i have just got a one owner from new '80 polo. im looking for a set of ATS classics an i want it really low. i am not too bothered with a stiff ride, my other car is a 1955 Beetle with around an inch of clearence. So how low can i get without rolling arches an stuff? what size tyre and what offset should i look for?
