I know the service interval is very 10000 miles or annual but is there a minor and major service program and what additional work would need doing on the major.
Also when does brake fluid need doing, coolant changing and timing chain need changing

Extra work during the Inspection/Major services varies with the miles/years run - pollen filter every major, ie 2 years, air filter and spark plugs every 6 years or corresponding mileage, ie 60K miles, unless you feel that an air filter change is better done at 4 years.
Brake fluid, after 3 years from new, then every 2 years.
Coolant should be for life if it remains to be the correct VW Spec'd G12+/G12++/G13.
Timing chain would only ever get replaced if it started to get noisy, so not a scheduled service item.
Edit:- sorry if I did not clear up all points, after 12 months/10K miles the car should get an oil change, so it runs minor>major>minor>major year by year or 10K by 10K miles.
