Hi all so the wife's just set off for work but the car wouldn't budge had to go out and rock the rear brakes off!!! would a clean n lube and or some better shoes do the trick? if so what make pagid etc and what do I torque the hub nut upto?

Car brakes need servicing every 2 or 3 years if you want them to remain working as well as possible, brake servicing is not part of VW Group normal service plans, so brake issues tend to occur more with VW Group cars that are still within the dealership servicing network.
So, yes take the drums off, I'd expect that these Polos are the same as equivalent Ibiza and the drums can be removed without removing the hub nut, especially as these hub nuts are NyLok and cost quite a bit, I know as I bought a couple for a late 2009 Ibiza.
If you are planning to take care of servicing of this car, maybe buy a Haynes manual.
Edit:- I'd think at this stage all that is needed is to clean out the rear brakes, making sure that the wedge is still okay and that the handbrake lever is not seized, and clean up the braking surface of the drum using a wire brush on a drill until the rusty lip vanishes and the entire braking swept surface is shining again and so free of blackened/rusted areas which will be mainly why the car brakes are seizing when left a few days maybe after washing or heavy rain.
Another Edit:- when these cars are a bit older, it seems that the best plan to replace everything that is in there, and TRW, who manufacture brakes and steering systems, sell a complete kit of pre-assembled shoes/springs/wedges + hold down fixings + glide pads and maybe even new cylinders - for very little money via a seller in German ebay I believe! I bought a set of Pagid shoes via ECP but so far I have not plucked up the energy to completely strip them down and fit new shoes as the existing ones are okayish.

I just bumped into a you tube video on sorting out the rear brakes on Polos, it seems this guys plan was to clamp off the rear brakes and remove the brake cylinder when replacing or removing everything - as it seems that this allows you to get everything out and over the hub without needing to pay for a pair of expensive "use once" hub nuts.
Edit:- now any time I've removed a brake pipe from an older car it has been a bit of a bigger job than it should job, but if you live in an area where not too much road salt gets laid down, that cylinder removal might work for you - or if you find the area round the cylinder(s) damp.
I looked on ECP for curiosity and only found the "shoes only" kits like I have in the garage, I have seen them selling the fully assembled kits in the past though, but not right now.
Another Edit:- ah, I've found them, it seems that there has been some slight changes between my daughter's late 2009 Ibiza rear brakes and your 2014 Polo rear brakes, just seems a bit strange or ECP have not got it right.

I did them this morning still plenty of friction material on them very dirty tho!!! gave the mech a good clean and rubbed down the drums then applied a little copper grease to the levers at the top were they slot together looked like there was some white grease on there to start with but I cleaned all that off the friction material looked very differant to the usual stuff it looked like black plastic or nylon my money is on the material being more suseptable to sticking I'll l see over the next few weeks if its any better
