I've got the same problem and could only put it down to the sensor being faulty or sticking, this is a complete pain especially in this weather.

I dont really want to take it to my dealer as I think they'll just replace the thing and cant really justify the cost for fixing something that ok at the moment

Does any have any ideas?

Someone with VAG-COM locally, who could scan your car for issues?

then maybe you could replace the temp sensor yourself? cheaper?

If you are getting it serviced next week, then id be tempted to wait - you could mention it to them when you go in to have a check and then if anything needs doing or replacing, you won't have to pay labour costs twice

if your fuel gauge is messing about too then it may be the voltage reugulator
if not the coolant sensors are fairly cheep and easy to do (leave the expansion cap on so the air lock holds back the coolant) try vag parts ;)

when yopuve got the engine cover off look for a place where a few coolany pipes congregate. (usually either on the front or somewhere above the clutch). When you find this look for a pipe with a wire going into it. this is the sensor. Replacement ones are available at www.Vagparts.com.
To replace it slide out the black plastic clip that secures the sensor then pull form the pipe. quickly fit the new on with a new clip and O ring. It helps if you leave the coolant cap on as this seals the coolant system, this means you loose less.
while your in there chenc the engine earths as they dometimes do dodgy things like that.
