6C GTI spacers size

I'm considering getting some spacers for my GTI. I preferably would like to go with 15mm front and back because I've read that 20mm+ puts a lot of unnecessary stress on other components. I also had 20mm ones on my old 6R GTI, front and back with unknown lowering springs (was like it when I bought it) and the tyres scraped the arches over any bump.

What size spacers do others use? And if its 20mm, do you get any tyre scraping with stock springs? I would be open to getting 15mm on the front and 20mm on the rear if it looks better.

Why is it so hard to measure the distance from the wheel surface to the fender? ( giving you the spacer width you need)

What about accounting for suspension travel? My old car didn't look like it would hit the arches but it still did
